Preparation Instructions:
Step 1
Prepare the Everything Bagel Avocado Spread, see the recipe here.
Step 2
Prepare caramelized onions and sweet potatoes according to package instructions. Hold warm.
Step 3
For each sandwich, spread 1 oz. avocado on a slice of toast. Top with 2 poached eggs, 2 slices of bacon, and 2 oz. onions. Spread second piece of toast with 1 oz. avocado and place on top of onions. Serve with 5 oz. of sweet potatoes.
