Cold Woodle Salad

Mix tender, chewy noodles with crisp veggies and a flavorful sun-butter sauce...what do you have? A fun, easy-to-make dish that students won't be able to get enough of.
Preparation Instructions:
Step 1
Prepare edamame according to package instructions. Chill.
Step 2
To prepare noodles, place noodle cakes in a large hotel pan or heat resistant bowl. Carefully pour enough boiling water over the noodles cakes to submerge them and allow to sit for 5 minutes. Drain from water. Rinse with cool running water to stop the cooking process.
Step 3
For the sauce, in a large bowl combine sun butter, soy sauce, ginger, vinegar, brown sugar, and chile sauce or cayenne. Whisk well. Then gradually add in warm water until the sauce is a smooth and pourable consistency. Less or more water may be needed.
Step 4
Mix woodles with sauce.
Step 5
To serve, place 1 cup of sauced noodles into a serving container, top with 1/4 cup cucumber, 1/2 cup cabbage, 1/4 cup carrots, and 1/4 cup edamame.
