Students will love this colorful bowl—it's packed with chicken, veggies, fried rice and served with a delicious sauce that brings it all together.
Preparation Instructions:
Step 1
Defrost chicken, edamame, and broccoli in refrigerator overnight.
Step 2
Preheat oven to 375°F.
Step 3
Spread 1 bag of frozen rice in an even layer on a full size baking sheet. Heat for 20 minutes, uncovered. Thawed rice can be heated in a full size 2-inch deep steamtable pan at 375°F for 10-12 minutes uncovered.
Step 4
Adjust oven temperature to 350°F. Place thawed chicken in a 2-inch deep full size steamtable pan. Cover and heat for 10-12 minutes or until heated through. Add sauce and stir to coat. One full size pan can hold 5 lbs. of chicken.
Step 5
Place edamame in a 2-inch perforated pan. Steam for 3-5 minutes until bright green. Do not overcook!
Step 6
Place broccoli in a 2-inch perforated pan. Steam for 3-5 minutes until bright green. Do not overcook!
Step 7
To serve, portion 1 cup fried rice into a bowl or paper boat. Top with #16 disher (1/4 cup) broccoli, #16 disher (1/4 cup) edamame, and #12 disher (1/3 cup) teriyaki chicken.
