                          Get all the vibrant flavors of a traditional clam bake, but make it easy to prepare (and serve). Make it sheet-tray style; with all the flavors of roasted potatoes, corn and caramelized-style onions, and traditional seafood additions. You’ll get authentic results with prep that your kitchen and wait staff will appreciate, and your patrons will love!

                          2.5 lbs.

                          1 bag

                          Simplot Simple Goodness™: RTE Caramelized-Style Onions

                          3 cups

                          Simplot RoastWorks®: RTE Flame-Roasted Simply Sweet® Cut Corn

                          3 cups

                          White wine

                          1 cup

                          Butter, sliced into 4 even pieces

                          1/2 stick

                          Thyme sprigs, fresh

                          4-5 each

                          Lemons, halved

                          2 each

                          Garlic cloves

                          3-4 each

                          Shrimp, 16/20, peel and eat

                          1 lb.

                          Little Neck clams

                          20 each

                          Old Bay seasoning

                          1 Tbsp.

                          Chives, fresh, chopped

                          as garnish

                          Parsley or chervil, fresh, chopped

                          as garnish

                          Preparation Instructions:

                          Step 1:

                          Preheat combi oven to 375˚F, steam to 75% and fan to 100%.

                          Step 2:

                          Prepare Baby Bakers™ according to package instructions.

                          Step 3:

                          Place onions, corn, white wine in hotel pan followed by clams, Old Bay, lemons, and fresh thyme. Place butter slices evenly spaced in the pan for even cooking. Place both potatoes and clam bake pan in oven for 12 minutes.

                          Step 4

                          After cooking clam mixture for 6 minutes, add shrimp to pan and allow to finish until clams open and shrimp are fully cooked.

                          Step 5

                          To serve, pull everything from oven and arrange potatoes and seafood mixture on serving platter. Garnish with chives and additional herbs for color.

                          Note: The cooking dish for clam bake can be used for service.
