Southwestern-Style Loaded Hot Dog

Step 1

Preheat combi oven to 375˚F, medium fan.

Step 2

Prepare both sauces and place in separate containers for service.

To prepare the Aji Amarillo Ketchup, sauté onions until translucent, season with salt. Add Aji Amarillo paste and minced garlic to pan and continue to cook for 1 minute. Add water and combine. Place onion mixture in high powered blender with ketchup and mayonnaise and combine until smooth.

To prepare Tomatillo Avocado Hot Sauce, place all ingredients in blender or food processor and combine thoroughly. Adjust with water for thinner consistency.

Step 3

Wrap hot dogs tightly with bacon pressing ends into hot dog so they stay in place while cooking (can also use toothpicks). Place in oven and cook for 8-9 minutes or until bacon is fully cooked and hot dog is warmed through.

Step 4

Prepare caramelized onions and corn and black bean blend according to package instructions. Prepare fries according to package instructions.

Step 5

To serve, place fries on serving dish. Place bacon-wrapped hot dog in bun and arrange on top of fries, cover with onions. Drizzle hot dog with both sauces and sprinkle with corn and black bean blend.
