Tender roasted pork loin seasoned with Chinese five spice and stuffed with Simplot Good Grains™ Thai Style Red Quinoa & Vegetable Blend.
Preparation Instructions:
Step 1
Preheat oven to 400°F.
Step 2
With a very sharp knife, starting parallel to the cutting board, slice open the pork loin and "roll" it open so it makes one large rectangular shape of meat, about 1/2-inch thick. Evenly coat the "opened" pork loin with 1 1/2 fl. oz. olive oil and sprinkle the Chinese five spice over the surface.
Step 3
Spread out the grains blend evenly over the surface of the meat, about 1 inch in from the edge. Tightly roll up the pork loin until it is back in the shape of a log. Tie or truss the pork loin to keep the meat together while baking. Rub the outside of the pork loin with olive oil and sprinkle with salt and pepper.
Step 4
Roast in a heavy roasting pan for about 20-30 minutes, until the internal temp reaches 165°F. Remove from oven, lightly cover with foil and let rest for 10-12 minutes before slicing.
