What a smart way to kick-start the school day with this tasty, energizing breakfast bowl. It's a morning mash-up that students won't be able to resist.
Preparation Instructions:
Step 1
Preheat convection oven to 425°F.
Step 2
To prepare peach compote, combine frozen peaches, water, lemon juice, sugar, cinnamon, ginger, and salt in a saucepan or kettle. Bring to a simmer over medium high heat, and continue to simmer for 10 minutes or until peaches are soft.
Step 3
Purée the peach mixture using an immersion blender until smooth. Keep warm for service.
Step 4
Arrange Tater Squares™ in a single layer on sheet pans. Bake at 425°F for 12-15 minutes until golden and crisp.
Step 5
Spray a 2-inch deep steam table pan with pan release. Add eggs to pan. Steam for about 5 minutes.
Step 6
Prepare sausage according to manufacturer's directions. Stir into scrambled eggs.
Step 7
To assemble bowls, place a #8 disher (1/2 cup) of Tater Squares™ in a bowl or paper boat. Top with a #12 disher of scrambled egg mixture, .5 oz cheese, and #24 disher of peach compote.
