Bring the ever-popular avocado to your cocktail menu with this interesting take on the classic martini.

Ingredient	Weight	Measure
Simplot Harvest Fresh® Avocados: Avocado Pulp, Frozen, thawed	4 oz.
Coconut milk, sweetened	4 fl. oz.
Vodka	2 fl. oz.
Vermouth, dry	1/2 fl. oz.
Tajin spice		as needed

Preparation Instructions:

Thaw avocado according to package directions. Pour all ingredients into a blender and purée until smooth. Pour into a cocktail shaker with ice cubes. Shake and strain into a chilled, Tajin-lined martini glass.
