Bubble Waffles with Avocado and Savory Breakfast Filling

Put a fun, delicious twist on your brunch and breakfast menus with these bubble waffles. Crispy on the outside, tender and fluffy inside, and packed with savory fillings.
Preparation Instructions:
Step 1
Thaw avocado pulp according to package instructions.
Step 2
Prepare the Everything Bagel Avocado Spread, see the recipe here.
Step 3
Combine avocado pulp, Bisquick™, milk and egg in a bowl and combine thoroughly with a whisk.
Step 4
Preheat a bubble waffle iron and lightly grease it with oil or non-stick spray. Pour about 3/4 cup of batter into the center of the waffle iron and close it gently, then flip over allowing the batter to spread. Cook for 2 minutes and flip again, cook for an additional 2 minutes or until the waffle is golden brown and slightly crisp. Remove the waffle and immediately roll it into a cone shape using a cone mold or by hand. Let it cool slightly to hold its shape.
Step 5
Prepare the redskin and jalapeño blend according to package instructions. Keep warm. Prepare scrambled eggs and season with salt and pepper.
Step 6
Spread a layer of avocado spread inside each bubble waffle cone. Add a spoonful of the prepared potatoes. Layer scrambled eggs and pieces of candied bacon on top. Garnish with additional avocado spread and fresh herbs if desired.
