Breakfast Crunch Wrap

Looking for a portable meal packed with savory-sweet flavors and a satisfying crunch? Fill a flour tortilla with scrambled eggs, maple waffle bites, a crunchy tostada shell, fresh chopped Romaine and a flavorful everything bagel avocado spread. Then grill it to golden perfection for a delicious meal to serve for breakfast or any time of day.

Step 1
Prepare the Everything Bagel Avocado Spread, see the recipe here.
Step 2
To prepare the Roasted Corn Hot Sauce, add all ingredients to a vita mix blender or food processor and blend until smooth. Add more water as needed to adjust consistency.
Step 3
Prepare waffle bites according to package instructions. In a small bowl, combine lettuce and jalapeño.
Step 4
To assemble wrap, spread 2-3 oz. of avocado spread in the center of tortilla, leaving edges clear. Top spread with romaine mixture, tostada shell, scrambled eggs, and waffle bites. Start folding one section at a time creating 8 folds toward the center, one overlapping another.
Step 5
Place wrap, folded side down, on a preheated grill or flattop for 60-90 seconds to crisp and seal the folds. Flip and sear the other side (top) until golden brown. Cut wrap in half and place on serving dish with a side of hot sauce. Garnish with cilantro and lime wedges.
