Tater Squares™ Casserole

Sometimes you just need comfort food. This casserole is nostalgic and, dare we say it, absolutely delicious any time of day.
Preparation Instructions:
Step 1
Preheat oven to 350°F.
Step 2
In a large sauté pan, cook bacon until almost crisp. Add the onions and continue cooking until bacon is crisp and onion is softened. Drain.
Step 3
In a large mixing bowl, whisk the eggs with milk, garlic powder, salt and cayenne pepper.
Step 4
Spray a half-sized hotel pan with cooking spray. Layer half of the potatoes on the bottom of the pan. Top with the cooked bacon and onion. Top with half the cheese. Layer remaining potatoes on top. Pour egg mixture over the top of the pan and sprinkle with remaining cheese. Cover and bake 55-60 minutes. Uncover and continue baking an additional 5-10 minutes until cheese is melted and egg is cooked through.
